
Estrella Damm Gastronomy Congress 2017 was held on October 30th and for us, it could not have started better. Alexandre Silva and Manuel Liebaut took to the stage at 11:30 am to offer all the guests a completely LOCO moment.
The Congress was dedicated to Generating Trends, a theme at the height of what we like to do most: breaking rules. This was the essence of chef Alexandre’s speech – not a reflexive approach to the glaring tendencies with which we now intersect, but rather to the creation of the same. “Creativity beyond the Territory” has led to the sharing of ideas in which the chef believes, reinforcing repeatedly throughout his speech that we must move away from what we already know to develop the ability to create something new. Of course, without ever forgetting our roots and quality products that we have in Portugal, the only products that spend every day at the hands of our team and that the chef always makes a point of reference. This is the true Portuguese cuisine.
During the presentation, we demonstrated two of our most recent creations: sea marinade, which has the combination of acidity and fat typical of this traditional sauce, but which appears earlier in a more iodine record; and a dessert that, apart from not carrying the traditional flour, eggs and sugar, is just turnip.
